Smoked Gouda Cheeseburger Meatballs


  • 2 Lbs Ground Beef 85/15
  • 2 Eggs
  • 3/4 Cup Almond Flour
  • 1 Tbsp Reduced Sugar Ketchup
  • 1 Tbsp Mustard
  • 1 Tsp Worcestershire Sauce
  • Sea Salt and Pepper
  • 1 Cup Gouda Cheese, Shredded
  • 6 Strips Bacon, Cooked and Crumbled
  • 1 Large Onion, Diced
  • Oil for frying (about 2 Tbsp, Divided)


  1. In a small pan over medium heat, add oil and grill the diced onions until cooked through and starting to brown, about 15 minutes.
  2. Meanwhile, combine meatball ingredients in a large bowl and mix well. Start forming meatballs.
  3. Heat large skillet over medium high heat.  Add oil to pan and brown  meatballs on most sides until cooked through, about 10 minutes. Place cooked meatballs in a line baking pan.
  4. Top meatballs with shredded Gouda cheese, grilled onions, and bacon and broil in oven until cheese is melted and starting to brown, about 5 minutes. Enjoy!
