Blueberry Mug Cake

Ingredients

  • 1 Tbsp Unsalted Butter
  • 2 Tbsp Heavy Cream
  • 3/4 Tsp Vanilla Extract
  • 1 Large Egg
  • 2 Tbsp Coconut Flour
  • 1 Tbsp Erythritol Sweetener
  • 1/4 Tsp Baking Powder
  • 8 Fresh Blueberries

Directions

  1. In a microwave safe mug or ramekin, add all ingredients except blueberries and mix until smooth.
  2. Place blueberries on top.
  3. Cook your mug cake in the microwave for around 1 minute and 40 seconds or until set. Allow to cool before eating.
