- Preheat sous vide to 176F or 80C.
- Meanwhile, add sour cream, eggs, Monterey cheese, salt, and hot sauce into a blender, and blend until smooth.
- Grease 4 small mason jars with cooking spray.
- Divide egg mixture into jars and tighten lids.
- Sous vide eggs for 50 minutes. Carefully remove from water and let cool atleast 5 minutes. Top with sliced tomatoes. Enjoy!
