Mint Chocolate Chip Ice Cream
1/2 Cup Granulated Sweetener
2 Cups Heavy Whipping Cream
2 Tsp Vanilla Extract
1 Tsp Peppermint Extract
1 Cup Almond Milk
3 Oz Dark Chocolate
Food Coloring (optional)
Pour heavy whipping cream into a medium bowl. Using a hand mixer, beat whipping cream at high speed until stiff peaks form.
Add the sweetener a few tablespoons at a time while continuing to mix.
Beat in vanilla and peppermint extracts and the optional food coloring.
Gradually add the almond milk.
Pour mixture into the ice cream freezer and freeze. Add chocolate chunks at the end of freezing and allow the machine to stir them in.
Transfer to an airtight container and allow to harden in freezer for a few hours before serving. Enjoy!
