Strawberry Mug Cake


  • 2 Tbsp Butter
  • 2 Tbsp Granulated Erythritol
  • 1/4 Cup Almond Flour
  • 1 Tbsp Coconut Flour
  • 1 Egg
  • 1/4 Cup Strawberries
  • 1/2 Tsp Baking Powder
  • 1/2 Tsp Vanilla Extract
  • 1/4 Tsp Salt


  1. Puree strawberries in a blender until smooth.
  2. Microwave the butter for 30 seconds or until the butter has completely melted.Transfer to a separate bowl.
  3. Add the rest of the ingredients and stir to combine.
  4. Divide the batter between two coffee mugs and microwave for 90 seconds.
  5. Use a toothpick to test if it's done. If not, add a few extra seconds until cooked to your likeness. Be careful not to overcook.

Optionally, top with whip cream and sliced strawberry (not included in nutritional information).
