Bacon and Cheese Fat Bombs

  • 8 Oz Cream Cheese, room temperature
  • 1/4 Cup Butter, softened
  • 5 Slices Bacon
  • 2 Tbsp Cheddar Cheese, shredded
  • 1/2 Lime, zested
  • 1 Clove Garlic, minced
  • 2 Serrano Peppers
  • 4 Sprigs Cilantro, chopped

  1. Preheat oven to 350 degrees and line a baking sheet with aluminum foil. Lay bacon in a single layer on the baking sheet.
  2. Once heated, bake in oven for 15 minutes or until browned and crispy. Drain and let cool on a paper towel.
  3. Mix cream cheese, butter, and Cheddar cheese together in a bowl. Add in lime zest, a squeeze of lime juice, and garlic.
  4. Mix in Serrano peppers and refrigerate until stiff, about 10 minutes.
  5. Divide cream cheese mixture into 6 servings and roll into balls to form the fat bomb.
  6. Chop cooked bacon and place in a bowl with cilantro. Roll 1 fat bomb in the bacon mixture at a time to coat completely.
  7. Chill until ready to serve.
