Crispy Baked Zucchini Chips
4 Small Zucchini
1 Cup Parmesan Cheese, grated
1/2 Cup Parmesan, shredded
Slice zucchini into 1/4 inch thick slices.
Prep a large baking sheet parchment paper.
Spread out the sliced zucchini onto the baking sheet. Sprinkle with salt and pepper.
Sprinkle Parmesan cheese evenly over each zucchini slice. A blend of grated and shredded works best.
Bake in oven at 425 for 20 minutes, or until the cheese turns a golden brown color.
Serve warm with or without a small serving of low sugar pasta sauce.
