Savory Zucchini and Bacon Muffins
1 Zucchini, Shredded
1 Cup Cheddar Cheese, Shredded
1/4 Cup Heavy Cream
1/4 Cup Water
6 Slices of Bacon
4 Tbsp Flax Meal
1/2 Cup Parmesan Cheese, Grated
1 Tsp Onion Powder
1 Tsp Garlic Powder
1 Tbsp Italian Seasoning
1 Tsp Sea Salt and Ground Pepper
1 1/2 Tsp Baking Powder
1 Cup Almond Flour
Preheat the oven to 350 °F. Cut the bacon slices into thin strips and place on a hot pan. Cook over a medium heat until the bacon is crisped up, for 10 minutes.
Shred the zucchini and cheese and set aside.
In a bowl, mix all the dry ingredients.
In another bowl, whisk the eggs, cream and water. Add the mixed dry ingredients into the bowl.
Combine well and add the crisped up bacon, shredded zucchini and shredded cheese.
Combine and spoon into a muffin pan.
Liners optional. Should be about 10 muffins total.
Place in the oven and bake for 25-30 minutes or until the tops are golden brown and the muffins are set. Let cool and enjoy!
