Instant Pot Chicken Enchilada Bowl


  • 1 Lb Chicken Breast
  • 3/4 Cups Enchilada Sauce
  • 1/4 Cup Water
  • 1/4 Cup Onion, Diced
  • 4 Oz Green Chiles
  • 1 12 Oz Bag of Cauliflower Rice (Steamer One from Frozen)
  • Avocado
  • Jalapeno
  • Cheese
  • Tomatoes


  1. Salt and pepper chicken breast. Set Instant Pot to Saute. Add oil and sear chicken for 2 minutes on each side. 
  2. Add enchilada sauce, chiles, onions, water. Set Instant Pot to manual/pressure cook on high pressure for 10 minutes. Prepare cauliflower rice per instructions on bag.
  3. Release pressure, shred chicken and serve over cauliflower rice with favorite toppings.
